For Content Workflows, you can specify one or more content types you want the workflow to apply to.
Important Notes
If you choose a content type, this workflow will apply only to that content type(s).
If you do not choose a content type, this workflow will apply to all content types.
To build a workflow for assets, you will need to create a new workflow and choose Assets from the dropdown

System Administrator | Owner | Publisher (Read Only)
Instructions
Navigate to Settings and then select Workflows
Click the gear icon next to the Workflow you wish to edit
Choose Content Type(s) from the drop-down and click Enter
Scroll up and click Save
